that just-baked smell

over the last few months, I've been given the gift of time. this is a euphemism for being out of work, but it is true. and what do I do when I have lots of time? read books. and forget to go outside.
I've read all of Liz Jensen's novels in a matter of weeks. she's a seriously talented lady. her most recent, 'the rapture', is very good, but my favourite was 'the ninth life of louis drax'. it also has a creepy cover, which I like.





feel like baking delicious strawberry and ricotta muffins? hell yeah, you do. they're simple to make and will fill your home with that 'i just baked muffins' smell. this will make twelve:

turn oven on - 180C
line 12-hole muffin pan with pretty cases
mix 2 and a half cups of self-raising flour with 2/3 cup caster sugar and a generous sprinkling of cinnamon
beat 2 eggs and mix with 60g butter and a cup of milk
add the wet mix to the dry mix and stir until light and heavenly
add 3/4 cup of ricotta and a load of strawberries
mix and dollop into the cases
top each muffin with an extra scoop of ricotta and a couple of strawberry pieces
bake for 25 mins
cool
eat
